    Default Coconut Milk

    Hi all,

For years I've been trying to find an alternative ice cream to eat during my bad evening flushes. I've been looking for one that is dairy, sugar, gluten and artificial anything-free. There are a few in the US but none over here in the UK.
I've recently been making it myself with plain soya yoghurt, but its basically frozen ice and I've read that lots of soya (I also have soya milk in the mornings) is not good for you.

So my latest experiment is with coconut milk, the thick variety. I seems to work quite well and is a much better texture - less like a block of ice. Also as I don't have any added sugar in my diet its sweet enough already. The only snag is it's very high in fat/calories and very inflamatory. I'm worried that this might flare up my rosacea and seb derm.

As ever the internet is full on contradictory information. Some sources say the inflammatory properties help boost the immune system:

Has anyone ever tried eating coconut milk or oil? If so, did you notice any change in your rosacea for better or worse?

    Thanks

I cook with coconut oil and eat quite a lot of coconut. i have never found that it makes my rosacea or seb derm worse nor have I found it makes a marked improvement.

Well the last time I had a chance to have some nice natural coconut milk I lost it all down the plughole in the sink because I didn't expect the thing to smash into smitherings first blow with a hammer

Cocunut is suppose to have antifungal properties so you never know might be useful, but what the hell either way your idea for homemade ice-cream sounds delicious, send some over!

Thanks for the replies. I'll give it a go and see what happens
The recipe I'm working from is this:

I'm starting with just the coconut milk at this point. But it serves is purpose just as it is, albeit not as enjoyable as the real thing haha

Unfortunately not. I just pop it in the freezer and give it a stir every know and again.
I did have a cheap ice cream maker but stuck it on ebay as it did nothing! But that's probably because of the lack of ice cream ingredients haha

I went back to the supermarket for more coconut milk. Looking at the ingredients there are loads more now! it seems the company was bought out and in their wisdom they've added a load of nasty ingredients. Why do companies do this?!!!
